Makes 7 dozen cookies

6-8 cups flour
1 teaspoon salt
1 1/2 teaspoons cinnamon
2 table spoons ginger
3/4 teaspoon nutmeg
1 cup shortening
1 1/2 cups sugar
1 egg
1 1/2 cups molasses
2 table spoons vinegar
4 level teaspoons baking soda
1 cup boiling water

Cooking Instructions

Sift 6 cups flour with salt and spices. Cream shortening and sugar. Add egg. Beat all together until light. Add molasses and vinegar, then sifted dry ingredients. Lastly, add baking soda dissolved in boiling water. If necessary, add more flour to make soft dough. Stand in cool place overnight. Next morning, flour hands well, roll out on bread board about 1/4 inch think, then cut with cookie cutter. Sprinkle with sugar. Bake at 250 degrees for 8-10 minutes.
